A Healing Aroma from the Deep Mountains — Handcrafted with 350 Years of Secret Tradition
Since its founding in 1666, Honke Bankyu, with a history spanning over 350 years, has carefully passed down a secret seasoning recipe from one okami (female innkeeper) to the next.
This traditional spice has long accompanied the hot springs and mountain delicacies of Yunishigawa, soothing both the body and spirit of our guests.
In the past, it was created out of hospitality — to enhance the flavor of mountain vegetables for long-staying spa guests, and to remove the strong odors and toxins from wild game dishes such as bear, deer, and pheasant.
The blend combines carefully selected natural ingredients from the surrounding mountains, known for their fragrant and medicinal qualities.
Over time, this seasoning’s exquisite aroma and depth of flavor gained popularity among visitors,
and it became known as “Kouzen Jūmi Togarashi” — a signature specialty of Nikkō and Yunishigawa Onsen.

The Japanese pepper (sanshō) used in this blend is grown in Japan’s high mountain regions,
where the cool climate gives it an exceptionally rich and aromatic flavor.
Our Kouzen Jūmi Togarashi is made with an abundance of this fragrant sanshō,
along with ingredients rarely found in ordinary shichimi (seven-spice) — such as perilla leaves and seeds, and egoma (wild sesame).
Carefully selected red chili peppers, black and white sesame, aonori (green seaweed), hemp seeds, poppy seeds, and dried mandarin peel are gently roasted and blended using Honke Bankyu’s secret recipe,
sealing the pure essence and fragrance of each ingredient into every tin.
Unlike typical shichimi, which focuses on spiciness, this handcrafted blend is characterized by a deep, rich, and soothing flavor that embodies the very spirit of the mountains.

This product is packaged in a plastic bag with an oxygen absorber, allowing for long-term storage in a cool, dark place. After opening, please refrigerate.
